Can you believe it, Mimi's Corstorphine is a month old today?! Mimi’s Corstorphine is the latest addition to the Mimi’s Bakehouse family. Recently opened on the 18th February 2016 we have brought the warm and welcoming much-loved Mimi’s experience to the west of the city. Just like our Leith bakehouse, our Corstorphine branch serves Belly Busting Breakfasts, Lavish Lunches and Afternoon Tea. Of course no visit to Mimi’s would be complete without enjoying our variety of lovingly baked award-winning cakes, cupcakes, traybakes and scones. Our motto 'It’s All About The Cake!' sits proudly above our over-abundant cake cabinet. Speaking of the cake cabinet, here it is : )
What a month it has been! From the moment we opened our doors the people of this friendly village have welcomed us with open arms, and for that we want to thank you. We have also enjoyed training new members of staff, most of which are local to the area and are a real asset to the Mimi's team. Opening during the school holidays was always going to be a challenge but we grabbed it with both hands and have enjoyed welcoming all you wonderful customers.
So what is to come? We have recently started taking bookings (thanks for your patience while we sorted this out), so if you would like to hold a special celebration with us please get in touch. Our summer menu will be coming your way soon so look out for some new fresh dishes to welcome in the (hopefully!) sunny Scottish Summer.

We wanted to bring you some of our favourite recipes here on our blog so first up Chocolate Brownie Cookies, they are amazing! Try these deliciously gooey chocolate brownie cookies, the perfect treat to get you through the mid week blues.

Chocolate Brownie Cookies
- 450g dark chocolate, chopped
- 4 tablespoons unsalted butter
- 350g caster sugar
- 1 teaspoon pure vanilla extract
- 4 large eggs
- 90g SR flour, sifted
- 1/2 teaspoon baking powder
- 250g dark chocolate chips
In a large bowl placed over a saucepan of simmering water, melt the chopped chocolate with the butter, stirring until smooth for about 5 minutes. Be careful not to burn the chocolate!
In another large bowl, beat the eggs and the sugar with a handheld electric mixer at medium speed until thick and pale. This will take about 5 minutes, and then beat in the vanilla extract.
Using a rubber spatula, fold in the melted chocolate, and then the flour and baking powder. Stir in the chocolate chips until it looks like a yummy chocolate mix.
Scrape the batter into a shallow baking dish, cover and freeze until well chilled and firm. This will take about 1 hour, so put your feet up and enjoy a cuppa!
Preheat the oven to 160°C and line 3 baking sheets with parchment paper. Roll 1 tablespoon-size mounds of dough into a ball and place about 2 inches apart onto the prepared baking sheets.
Bake for about 10 minutes, until the cookies are dry around the edges and cracked on top. Let the cookies cool on the baking sheets for 10 minutes, then transfer to a rack to cool completely before serving.
Mimi’s top tip: Enjoy when still warm with a dollop of clotted cream or ice cream x

Welcome to Mimi's Blog
Some of you may remember a few years ago we started a blog but it seems to have disappeared from your lives and so we are pleased to announce WE ARE BACK!
So welcome to Mimi's new and improved blog! We hope to keep you updated with all the latest goings on as well as giving you a glimpse behind the scenes at Mimi's Bakehouse.
2016 is a very exciting year for us here at Mimi's HQ; already this year we have made massive ground in our third premises Mimi's Bakehouse Corstorphine (more details on that in a separate post!), Mimi herself has been welcomed onto the board of the Scottish Bakers, we have taken part in a wedding fayre and hired our first non-family behind the scenes team member, she already feels like family anyway. :)
A short welcome to our blogging and newsletter team; there is me Ashley, I am Mimi's middle daughter, events extraordinaire, editor at large and I love to shout about anything Mimi's. Then there is Gillian, our new behind the scenes guru, super organised chick and our roving reporter. Last but not least the wonderful Rebecca, graphics and Adobe wizard and all round creative gem. Also we will have some guest blogs from our wonderful staff including Mini Mimi our Head Baker and Mimi her self.
