Baked Apple Crumble Cheesecake

Another one of Mimi's recipes to add to your collection. Our scrummy baked apple crumble cheesecake is the perfect mid week treat! Baked Apple Crumble Cheesecake

Ingredients

For biscuit base:
  • 145g Butter
  • 250g Digestive biscuits
For crumble topping:
  • 200g Plain flour
  • 200g Light soft brown sugar
  • 1 tsp Ground cinnamon
  • 100g Unsalted butter
  • 2 tsp Milk
For cheesecake mix:
  • 900g Cream cheese
  • 3 tsp Plain flour
  • 260g Caster sugar
  • 3 Eggs and 2 extra egg yolks
  • 200g Sour cream
  • 1 Large Bramley apple
  • ½ tsp Ground cinnamon
  • ¼ tsp Grated nutmeg

    Method

    1. Preheat the oven to 160C/340F/ Gas mark 5.
    2. Crush the digestives in a bowl until a fine crumb, add in the melted butter and mix until all the biscuit crumbs are covered.
    3. Press the mixture into a springform tin. Prick all over with a fork, then bake for 12 minutes before leaving it to cool.
    4. Prepare the crumble topping by rubbing the flour, sugar and cinnamon until it turns into breadcrumbs. Then stir in the milk. Place on a lined baking tray and bake for 20 minutes before leaving to cool.
    5. Slice the apple and add to a boiling pan of water, cook for 2 minutes before draining and leaving to cool.
    6. Beat the cream cheese in a bowl until soft. Then add the sugar, eggs, extra yolks, sour cream and flour, beat until smooth and light.
    7. Spoon half of the mix onto the biscuit base.
    8. Place the apple slices on top and sprinkle the cinnamon and nutmeg on top before covering the rest of the mix.
    9. Cover the bottom of the springform tin with tinfoil and place on a flat tray before baking for 90 minutes.
    10. Remove the cheesecake from the oven to cool, sprinkle the crumble mix over the top and enjoy!
