We wanted to bring you some of our favourite recipes here on our blog so first up Chocolate Brownie Cookies, they are amazing! Try these deliciously gooey chocolate brownie cookies, the perfect treat to get you through the mid week blues.

Chocolate Brownie Cookies
- 450g dark chocolate, chopped
- 4 tablespoons unsalted butter
- 350g caster sugar
- 1 teaspoon pure vanilla extract
- 4 large eggs
- 90g SR flour, sifted
- 1/2 teaspoon baking powder
- 250g dark chocolate chips
In a large bowl placed over a saucepan of simmering water, melt the chopped chocolate with the butter, stirring until smooth for about 5 minutes. Be careful not to burn the chocolate!
In another large bowl, beat the eggs and the sugar with a handheld electric mixer at medium speed until thick and pale. This will take about 5 minutes, and then beat in the vanilla extract.
Using a rubber spatula, fold in the melted chocolate, and then the flour and baking powder. Stir in the chocolate chips until it looks like a yummy chocolate mix.
Scrape the batter into a shallow baking dish, cover and freeze until well chilled and firm. This will take about 1 hour, so put your feet up and enjoy a cuppa!
Preheat the oven to 160°C and line 3 baking sheets with parchment paper. Roll 1 tablespoon-size mounds of dough into a ball and place about 2 inches apart onto the prepared baking sheets.
Bake for about 10 minutes, until the cookies are dry around the edges and cracked on top. Let the cookies cool on the baking sheets for 10 minutes, then transfer to a rack to cool completely before serving.
